Leaf the Bun

During summer cookouts it’s so easy to be consumed by carbs!  Buns, corn, potatoes, pasta, beer!  While I’m a firm believer that carbs are absolutely NOT a bad food, you still need to be careful not to over do it.  Just like every other food, it’s got to be in moderation.  Plus your carb choices have to be high fiber and packed with nutrition.

Yeehaw burgers were on the menu tonight and I so badly wanted to pair them with potato salad.  I just couldn’t bring myself to eat the heaping pile of potato salad I wanted and eat a hamburger bun!  So I had my little internal conflict while I was making my grocery list.  The potatoes won and iceberg lettuce was added to my list.

Lettuce wraps seemed to be all the rage while the Atkins diet was popular, so why not keep a good thing going? Lettuce wraps that is, not Atkins!  Typically I love to pile my burger high with lettuce anyway for the refreshing crunch.

Turns out, I didn’t miss the bun at all!  Plus I had zero guilt about my mound of potato salad.  Which by the way, is easy to pull together.

  • 6 red skin potatoes, washed, chopped, boiled
  • generous grinds salt and pepper
  • pinches dill to taste
  • 1 tomato chopped
  • 1 plain greek yogurt

So it looks like lettuce wrapped burgers will make an appearance in the rotation again this summer.  Corn on the cob is definitely going to win over burger buns too!

We offered some to our adopted outside cat who I affectionately call Toby, but he really just prefers to stick to cat food.  It helps him keep his slim figure.  Mice are more of his calorie splurge!
