Like tic tic.
Steve has been requesting bean burgers FOREVER! Somehow they never made the cut on the weekly menu plan. But tonight things changed. Bean burgers will be a staple in this house. Especially the black bean variety.
These were extremely easy to make and were creamy and delicious.
Combine:
- 1 can black beans
- rinsed, drained, and mashed
- 1/2 green pepper, 1/4 large onion, and 3 cloves garlic,
- roughly chopped, sautéed, and then minced in a food processor
*The sautéing is an extra step, but I wouldn’t eliminate it. I sauté peppers and onions whenever I get the chance because I love the sweetness instead of the bite.
- 1 egg
- 1/2 cup Italian bread crumbs
- 1/4 cup rolled oats
- 1 tablespoon chia seeds
- 1/4 teaspoon nutmeg
- 1/4 teaspoon curry powder
- 1/2 teaspoon red pepper
Mash it all together and form 4 patties. Bake at 375 degrees for 8 minutes on each side. Add cheese at the end and warm for a few more minutes to melt.
I’ll be crumbling my extra burger over a big salad for lunch tomorrow. Can’t wait!
