I looove it.
Any day of the year.
But today, I have an excuse to drink it.
Lucky me.
We also threw together some enchilada’s with leftovers and pantry supplies. All I had to buy were the tortillas.
In our enchilada filling:
- leftover Yeehaw chicken
- 4 ounces cream cheese
- 1/2 large onion, sautéed
- 1 1/2 green peppers, sautéed
- 1 can green chilies
- 1 can crushed tomatoes
- a few pinches garlic powder
- a few pinches chili flakes
- sprinkles of cheese
Fill ‘em. Roll ‘em. Smother them with extra filling and cheese. Bake ‘em at 350 degrees for twenty minutes, covered. Bake 5 more minutes uncovered.
