I had such high hopes for these fourth of July shrimpies and they ended up being just OK. Not bad and certainly still edible, just not as good as I thought they would be.
The gang peeled and deveined them this morning while I made the marinade. I definitely got the better end of this deal! Thanks Tara and Chris! And Steve, you did a lovely job supervising. Lulu was also hard at work! ![]()
The marinade consisted of coconut milk, pineapple juice, Thai curry spices, dark rum, shredded coconut, and butter. I thought it sounded like a bang up combination, but it just didn’t do it for us. The pineapple, however, was delightful. I don’t think you can ever go wrong with grilled pineapple! ![]()
I’ll definitely be attempting shrimp kabobs in the future, but I think I’ll go with a dry rub next time. But hey, you live and you learn.
