Sometimes the things I have to share with you in the blog world are not very exciting. What can I say?! It’s real life.
We ate pizza Friday, left for the weekend, came back, now it’s Monday and we’re eating pizza. Again.
The dough recipe I’ve been using makes enough for two pies. This was the trial of holding the dough and using it days later. Now I can officially tell you it was a success. It wasn’t quite as fluffy, but that’s OK. It made an excellent, and more importantly easy meal on a Monday night.
Plus pizza is so versatile that it never gets boring. Tonight I used whatever we had around the house. It’s my favorite way to make a meal because it feels like it’s free! First layer was freezer pesto made from last years garden. Last of the batch and now it’s time to make more! Then I layered on a half a tomato leftover from last weeks burger meal. I filled in the gaps with black cherry tomatoes from the garden. First of the year! Cheese was also a leftover, muenster from burgers. See?! Free pizza! If I hadn’t have made this meal some of the ingredients would have just gone to waste.
And it’s yet another day that’s passed that I don’t have to go to the grocery store. Mission accomplished!
I wonder what I can concoct for tomorrow’s dinner?!
