The grill makes me believe in magic.
I send this outside…
And when it comes back in, it looks like this…
And I have zero dishes to do. Obviously magic.
Bend to snap off fibrous ends. Rub in olive oil. Grill on low until charred and tender.
Cut in 1/2 in thick slices and remove seeds. Leave skin on. Rub with olive oil.
Grill on low until grill marks present.
Move to second rack to continue cooking until tender.
After removing from the grill sprinkle with brown sugar.
Grill one side of steak on high until grill marks are nice and crisp.
Flip and brush cooked side with peach jam.
When second set of grill marks present, flip again and glaze second side.
Heat through to appropriate temperature.
Ours was thin, so it was done without extra cooking time.
