Hello!
My seedlings are looking awesome. Yesterday I planted asparagus, spinach, butter head lettuce, lettuce mix, and golden beets. Soon everything will be growing full swing (cross your fingers) and the kitchen will be filling up with fresh produce.
That means it’s time to clean out the kitchen. All of the kitchen. Pantry. Refrigerator. Freezer. Out with the old to make room for the new.
There’s no better way to do this than to make a soup! The mixture of beans and veggies I had around made a beautiful rainbow in my bowl. It really is true that you do so much of your eating with your eyes!
My concoction looks a little something like this.
Clean Out The Kitchen Bean and Veggie Soup
Serving Size 1 Cup Makes 20 Servings
From the Freezer
- 10 cups chicken stock
- 2 tablespoons chive butter
- 1 cup edemame, shells removed
- 1 cup black beans
- 1 cup kidney beans
- 1 cup cut green beans
- 2 cups corn
From the Produce Drawer
- 3 cups spinach
- 2 large carrots, sliced and sautéed in chive butter
- 1 large pepper, chopped and sautéed in chive butter
From the Pantry
- 1 can (14 ounces) diced tomatoes
- 1/8 teaspoon chili pepper
- 1/4 teaspoon garlic powder
- salt and pepper to taste
Calories: 115
Fat: 3.2 grams
Saturated Fat: 1.2 grams
Carbohydrates: 16 grams
Fiber: 3 grams
Protein: 6.3 grams
Considering it was just what I had around, it really did turn out well. Of course the best thing about it is you can make it with whatever you happen to have around the kitchen. Oh and it’s obviously easy to make too. The most difficult part (if you can call it that) is shelling the edemame and sautéing the pepper and carrots. Everything else you can just dump in a pot and simmer. I know, so tedious!
It was actually so good that Toby (I have no idea if that’s really his name, I just think it suits him) even looked longingly at it during the photo-shoot. But more than soup he wanted his head rubbed. Such a cutie!
Oh and I served the soup with some good salty Special K Crackers crushed in. I counted them! 24 in a serving so 24 went around my bowl. Of course the broken ones don’t count. Oh and the second bunch I just had for a snack with some sunflower butter don’t count either. Hey, what can I say…I tried!
